Vegan Parmesan with 4 Ingredients: Recipe #279

Sometimes I buy the super expensive vegan parmesan from Whole Foods as a delicious, zingy topping for our dinners. But now I know how to make it myself with only $2.75 of ingredients! Bonus: it takes less than 5 minutes.

I might not be able to get my Italian grandmother to willingly try it, but then again if I just put it on her plate she might enjoy it! Thanks to Dana for inspiration.

Ingredients ($2.75 total)

1 cup raw cashews – $2.00
1/4 cup nutritional yeast – $0.40
1 tsp garlic powder – $0.28
1 tsp salt – $0.05

Directions for Vegan Parmesan

1. Put all the ingredients in your food processor, and blitz it until you get it is finely ground, with the texture of grated cheese.

2. Sprinkle it liberally on top of your favorite pasta, risotto, salad, or pizza dish.

3. I like to store vegan parmesan in a sealed tupperware container in the freezer for extra freshness. Enjoy! ❤️🤗
